The first birthday cake

Ingredients:
2 dl Greek yogurt
250 g very ripe bananas
2 eggs
1/2 dl rapeseed oil
4 dl oatmeal
1 1/2 teaspoons baking powder
1/2 tsp baking soda
Frosting:
350 ml cream cheese
Vanilla sugar
Course of action:
Preheat the oven to 180 degrees fan.
All ingredients are blended together.

In 2 small cake tins of approx. 10-12 cm, pour half the batter into each and bake for 20-25 minutes.
While they are baking, you can make the frosting. Taste the cream cheese with vanilla sugar until it tastes good to your liking.

When the kagebenden are finished and completely cooled, take them out of their form and halve so that you have 4 forms in total. Between each layer is a thick layer of frosting. Finish with frosting and decorations on top😄

The first birthday is always something very special and so must the cake be❤️

When Norr turned one, I made a huge cake table and at the same time wanted all the cakes to be without sugar. It took time to develop all the recipes for it, but we succeeded. The table consisted of donuts, popcakes, cupcakes and mini cakes. BUT no birthday cake. No matter how much I tried, it was never quite good and the ones I could find online just didn't taste particularly good.

A little over a month ago I tried again. After five attempts it finally succeeded. It is of course not quite traditional as we know them, but it tastes good. My little taste testers, Norr and Aija love it and I have subsequently baked it several times because they have requested it😄

So if you want a sugar-free birthday cake, this is the one to make😄
