Number cake
Ingredients:
Meringue:
8 egg whites
325 g Sugar
1/2 teaspoon vanilla powder
Red fruit colour
Mascarpone cream:
400 g Mascarpone
2 tablespoons powdered sugar
3 dl cream
1 teaspoon vanilla powder
Juice from 1/2 lemon
Procedure for meringue:
Preheat the oven to 80 degrees hot air.
Beat the egg whites stiff.
Add sugar a little at a time while whipping.
Add vanilla powder and food coloring.
Beat for about 15 minutes until the meringue is glossy and firm.
On a baking sheet with parchment paper, shape the meringue into a number or letter of your choice.
Bake for 2 1/2 hours.
Procedure for mascarpone cream:
Whisk together all ingredients except cream.
Add the cream a little at a time.
Whip to a firm and creamy consistency.
When the meringue is finished and cooled, you can start decorating.
Pour the mascarpone cream into a piping bag with an optional nozzle and press on top of the number or letter.
Garnish with optional topping.
