Quinoa portions
Ingredients:
300 g. Quinoa
5 DL. Vegetable broth
300 g. Chickpeas (canned) (coarsely chopped)
6 eggs
4 red onions, finely chopped
1 large handful of parsley (coarsely chopped)
4 cloves of garlic (pressed)
4 tsp. Cumin
2 tsp. Thyme
2 tsp. Oregano
8 tbsp. wheat flour
150 g. Feta (crumbled)
Salt and pepper
Course of action
Rinse the quinoa thoroughly. Cook it in the vegetable broth in a saucepan. Let it simmer until the water is gone. Chop the other ingredients and mix well. Fry on a pan.
It is quite a large portion and you can possibly halve it if it is too much. I would say that there are approx. 30-40 parts depending on how big you make them 😄
