Quinoa chunks

Ingredients:

 

3/4 cup Quinoa

450 g Minced chicken

1 small onion, finely chopped

3 cloves of garlic, cloves, crushed

1 red pepper, finely chopped

1 tsp olive oil

1 teaspoon of oregano

1 teaspoon chili powder

Salt & pepper

Course of action:

Start by rinsing the quinoa in a strainer.
Then boil the quinoa in 1 1/2 dl of water for 5-10 minutes.
Drain the water and set the quinoa aside.

Preheat the ovens to 180 degrees fan.

Pour olive oil into a pan. Saute onion, garlic and bell pepper until soft.

Pour minced chicken, spices, quinoa and the sautéed vegetables into a bowl.

Stir thoroughly and distribute in muffin tins (if you don't have a tin similar to the one I used)

Bake in the oven for 20-25 minutes. (If you use the same tin as me, they only need to bake for 10 minutes
