Vegetarian meatballs
Ingredients:
2 1/2 dl canned chickpeas
2 large carrots
3 cloves of garlic
1 1/4 dl breadcrumbs
2 eggs
1 tablespoon basil
Salt
Pepper
Course of action:
Pour the water from the can of chickpeas. Blend the chickpeas in a food processor or with a fork.
Grate the carrots and drain the liquid in a tea towel. You do this by twisting the tea towel until liquid is squeezed out of the carrots. Add to the bowl of chickpeas.
Crush the garlic with a garlic press and add the garlic to the bowl as well.
Finely chop the basil and add other ingredients to the bowl. Stir thoroughly.
In a hot pan with oil, fry the mixture just like you would fry meatballs.
Tip: the one carrot can easily be replaced with a squash for more variety. This must also be drained together with the carrot
It is rarely me who is responsible for dinner at home. I almost always have late days off and therefore can't make it. But when I do, I always make some kind of vegetarian dish. It usually falls on vegetarian meatballs.
I love vegetarian meatballs, both because there are so many different versions of them and then I love the crispness on the outside and the softness on the inside😅
