Spinach Muffins

Ingredients:
5 dl fresh spinach
2 eggs
1/2 cup maple syrup
3 tablespoons extra virgin olive oil
1 teaspoon vanilla powder
2 1/4 dl oatmeal
2 1/4 dl almond flour
2 teaspoons baking powder
1/2 teaspoon salt
Course of action:
Preheat the oven to 175 degrees.
Blend all ingredients to a smooth mixture.
Fill the muffin holder 2/3 full with the batter and bake for approximately 15 minutes.
Allow the muffins to cool before removing them from their tins.
I would dare to say that these are the best spinach muffins out there 😅 I've made quite a few different ones and these take first place. Besides being good, they are also really good for both you and your child. They are packed with a lot of good nutrition and a lot of healthy fat.

I would recommend making a double portion, as you get about 5 muffins here and they can easily be frozen for up to 3 months.
